Chilly night with some chili in my tummy:)

Hi all! Wanted to give you the recipe for this because it was the hit at my house:))

White Chicken Corn Chili with a side of corn bread!


McCormick white chili packet
Taco seasoning packet
3-4 chicken breasts (frozen or thawed)
2 cans of corn
2 cans of pinto beans
2 cans of great northern beans
Chili powder (to your liking... I do mine a little spicier than normal because the corn bread is a good offset!)

Throw it all in the crockpot and let it cook on low for 6-10 hours. Shred the chicken when it's cooked:)

If you don't wanna use the crockpot then just pan cook the chicken first and then throw all the ingredients in a pot and simmer it. Add chili powder to your liking:)

Make with some corn bread on the side:))) I used jiffy! Simple and quick:)

My To Do list

Last post, I left you all with a thought about what you would do if you could do anything with your life... Well, I would like to weigh into that a little...

There is NEVER just one thing on a to do list:
1. Finish nursing school
2. Be accepted into a Bachelors program
3. Be an amazing nurse who helps those in need
4. Fulfill another dream: be a photographer:)
5. Go to class to be a photographer and capture people's love for life
         Now, to touch on that... This past weekend I witnessed one of the coolest weddings ever! Believe it or not, I stole the photographers camera (borrowed sounds better) to capture a moment that otherwise would have been left out. The bride and groom wanted to take a shot with their amazing photographer, making a toast to the amazing moments she captured throughout the wedding process (engagement, wedding etc). The 30 seconds that I was behind that camera, I was on cloud 9... Weird huh? Nikons do that to me lol:) I have a plethora of pictures that I've taken and every once in a while, I look through them ALL! A little bit obsessive:/ Anyways, it's on my to do list as well.

6. Become a wife;)
7. Become a mommy (and in this order!) lol
8. I'll think of more but for now I have a final to study for.


Ahhh! I was domestic this week! I'm so proud of myself, our air wasn't working properly, so I took it upon myself and checked it out. I finally figured out the issue, it wasn't working right because since owning this house, we've never changed the air filter lol:) I will never make that mistake again:) it was easy after all. I was a good problem solver (without Phillips help;))

Playing House


      My Mom used to tell me that playing house was a lot different than owning that house. Well, she's right! It's not all fun and games (although, it has been recently:)) Phillip and I have a new respect for each other that we've gained by "playing house" for about 3 months now. Whether it's a good thing or a bad thing, we are both 100% ourselves now in OUR home:) It's always different living together in your parents house than it is living on your own. We were warned by EVERYONE that it would be different, difficult and that we would see each others "bad" side. Well, they were right about the different part, but honestly in these 3 months of living here we are the most happy we have ever been!

This upcoming Monday (October 1st) we will be celebrating our 4th anniversary! I can't believe how much we have changed in 4 years, or even from high school when we dated (oh how things have changed... for the good of course!). Things are so different and we have grown so much together! OK enough with the mushy stuff:)

Yesterday, we received a piece of mail addressed to both of us (doesn't happen much yet). It was the wedding invitation to our very good friends, Cali and Sean, Wedding! The invitation was gorgeous!!! I couldn't be happier for them! (Totally makes me want a wedding even more lol, but anyways...) There are so many weddings happening in the next 6 months! Jesica and Trevor are getting married next weekend at the Florida Aquarium (how freakin' cool!) and then Cali and Sean in November. Finally, Lyndsey and Derek are getting married in March! I couldn't be happier for all of my friends!

A big Congrats to our friends Cat and Pat on their beautiful baby girl Sofia Isabella! She is absolutely precious!!!

My reality: I am studying my booty off for the next 2 weeks amongst hanging out with all of my friends  and all of their events. I sometimes wonder how I juggle it all:/ Nursing school is kicking my butt right now and (not to be all debby downer) this is probably my least favorite and most challenging quarter of nursing school. Phillip has even come to me and asked me if I have any drive to do this anymore (becoming a nurse)... That question in itself made me kick myself into gear, put my big girl panties on and get the heck out of this quarter. Did I mention that I will be GRADUATING  in ONE year?????!!! I am so excited! I struggled the first couple years in college trying to figure out what I wanted to do, I even thought about making Wells Fargo a career, or as I told my friends "I was going to OWN Wells Fargo" lol. THANK GOD I went on vacation with the family last July and made the decision to continue what I started in high school! I owe so much to Phillip, my family and my friends (and the government lol) for all the support they have given me! I probably would still be in banking if they hadn't encouraged me to follow my dreams.

I got to spend the day in the Cardiac Catheter Lab at Manatee Memorial Hospital!!! By far the coolest experience yet! I have a love for Cardiac:)

The person that keeps me somewhat sane... I don't know if he knows the task he took on trying to do that:) I am a little crazy haha:)


Well, Now I have to stop procrastinating and start my Microbiology paper so I can finish it in time. Oh and study my 25 chapters for Med-Surg (I so wish that number was an exaggerated one:/ but it's real, 25 freaking chapters....INSANE!)

Food for thought: If you could be anything you wanted to be, not having to worry about money or responsibilities, what would you be? Are you fulfilling your dreams? You only have one life remember;) The possibilities are endless...

Marriage

What is marriage?

                This is a topic that has been coming up a lot in my household. All of our friends are either married, in a committed relationship, engaged, divorced or single. I always thought as a child that I would get married when I was done with college. 5 years later, 23 years old and I'm still in college and not married. I'm getting closer to being married everyday and starting the beginning of my life with Him. It's not simply taking his last name or "playing house", it's creating one life with the person you cannot live without. It is making memories together, having a family, sharing responsibilities, sharing feelings and dislikes, and taking care of each other till death do you part. It is a sacrament of the Lord, Intended to unite two people into Holy Matrimony and be faithful to the marriage and God.

“… the LORD hath been witness between you and the wife of your youth, against whom you have dealt treacherously: yet is she your companion, and the wife of your covenant.” Malachi 2:14
               No where in your vows (Your agreement with each other and GOD) does it mention, "I don't love you anymore, let's divorce." Today in society, it is widely accepted to divorce when a marriage has "irreconcilable differences" or "let's get this thing annulled, we weren't meant to be together."

               Should I be afraid to want to commit to a person for the rest of my life, since we both believe that divorce is never the answer? Does everybody say that when they get married, "we will always work through it?" Many think that it's just a piece of paper with two signatures vowing to be together forever. That piece of paper is a contract in the physical sense, but spiritually it cannot be broken.

                It's disappointing when friends and loved ones get divorced. It makes you really think about the life you live with the one you love and how your relationship is growing. How can you end something so permanently, won't you regret it, is can't be solved? These are the thoughts that have been rolling in mine and Phillip's mind this past week.

              When I make that vow to him, I will make it to God as well as myself, that my union will never be broken until death do us part.

Procrastination

It's funny how many times I've gone to start this blog and just can't find the right words to start. So maybe I'll start with the truth, I procrastinate just about everything I don't want to do... It occurred to me tonight when my best friend saw me post something on Facebook instead of completing my care plan (nursing school, don't ask).

But besides being a procrastinator, I am a nursing student who works her booty off to accomplish this. I will graduate ( proudly) in Sept '13. I also own a house with my darling other half, Phillip. We've been together for about 4 years now and dated for a short while during high school. We have 2 pups, Ellie (black lab/pit mix) and Sophie (shih tzu) and a cat named Mater ( like tow-mater from cars) who weighs more than Sophie:) he's a healthy cat lol. I am a faithful pinterest addict and have recently acquired etsy to that list:)

Aside from all that, I am a down to earth, loving girl who wants nothing more than to be a successful nurse, mommy and wife eventually. (You'll see all my future plans of this on pinterest lol)...

Well I think I have accomplished what I came here to do tonight, introduce myself and get started.
